​At 33, Chef Chris Hunsicker already has 17 years of experience in the culinary world. Originally from Mountain Top, PA. Chef Hunsicker earned his culinary degree from Johnson & Wales in Denver.

He started with an apprenticeship at Fruition, followed by Jaxs Fishhouse where he learned under many renowned chefs. Chef Chris then made his way to Florence where he spent a year working in a farm-to-table Domaine and learning about Italian and european cooking techniques. Upon his return, Chef Chris became the youngest executive chef for restaurants in Keystone, CO. He then opened his first restaurant, Breckfast in Breckenridge, CO which he has owned for now 7 years. Chef Hunsicker gets his experience of French cooking from Chef Yvan Heraud, with whom he started La Francaise Bistrot 4 years ago.

Chris's commitment to excellence is displayed in every aspect of his work. He brings traditional and refined French cuisine to Breckenridge, inspired by the Rocky Mountain lifestyle and fresh, simple, local ingredients.

Le Founder

With 40+ years of experience as a chef, Yvan Heraud has won multiple honors for his work. After attending culinary school in France, he worked more than ten years at Michelin star restaurants in the South of France. Chef Heraud made his way to the United States in 2017 and opened Trend Kitchen, a fine dining restaurant in central Florida, where he won the Golden Spoons award from Florida Trends magazine two years in a row. As the founder of La Française Bistrot, Heraud created a true French corner in Colorado, setting himself apart from other restaurants in the region and using family recipes to share with his customers.

During his well-deserved free time, Chef enjoys gardening, traveling and spending time with his dogs and family.

Chef Yvan Heraud
